Faith's Thai Chicken with Shirataki Noodles

Here is a recipe I've created to use with my Shirataki noodles.  Hope you'll try it!  Leave a comment!!

Ingredients
  • 2 (7 oz) Pkg of Shirataki noodles
  • 2 Tyson's Grilled boneless, skinless, chicken breast (in your grocer's freezer)
  • 2 T of Smooth Peanut butter
  • 1/8 c of Soy Sauce low sodium
  • 3/8 c of Low Sodium Chicken Broth (1/4 cup + 2tbps)
  • 1/2 T Fresh ground ginger root
  • 1 T finely chopped garlic
  • 1 T fresh Lime juice, approx. 1/2 lime
  • 1/4 tsp red pepper flakes
  • 1 Red chili pepper, sliced thin
  • 1/4 or so of fresh Cilantro
  • 3 green onion sliced into 1" long sections
  • 1/2 stalk of lemongrass (optional)
  • 1 tsp of chopped peanuts

Directions

Rinse the noodles very well under cold water for about two minutes -- trust me, you don't want the smell! Boil about 4 to 6 cups of water and toss in noodles. Boil 3 minutes and rinse again. then dump them on a clean cotton  or paper towel to dry them thoroughly.


Thaw two small Tyson's grilled chicken breasts or grilled breast strips, about 8 oz and  chop into 1 inch cubes. In a saucepan, combine soy sauce, peanut butter, chicken broth, ginger, garlic, red pepper flakes, lemongrass, and lime juice. Simmer liquid over medium for a few minutes until all peanut butter is fully incorporated. Don't burn!!! Remove lemongrass and toss chicken into mixture.  Pour peanut sauce mixture over the noodles, mixing well.  Add cilantro, green onions and red peppers, toss again, and serve with slices of lime and a sprinkle of  the chopped peanuts.
