Lo Carb Pizza - Yummy in my sleeve!

I took a stab at creating a low carb pizza after my buddy Nikki started tweeting about it. Shelly from the Eggface blog has some great recipes, but this was my take. 




Faith's Mini Lo Carb Pepperoni Pizza (adaptation from Shelly of Eggface)
  • 1 Mission Lo Carb Whole Wheat Tortilla
  • 1 tbsp of Pizza or Marinara Sauce
  • 1/4 cup of Non-Fat or Part Skim Mozzarella
  • 5 Turkey Pepperoni
  • Italian Seasoning or Herbs (optional)
  • 1 tsp. Grated Parmesan Cheese (optional)
I like pizza crust on the crispy side, so I heated the Tortilla in a 350 degree oven for about 5 minutes, flipped it over and gave it another 2 minutes until it was crispy. Next, crank up the oven to 450 degrees and let it preheat.

Take the tortilla and add spread the sauce on it with a spoon using a swirling motion from the center to the outer edges -- like they do in the pizzeria. Add the Cheese and the herbs. Place the pepperoni around the pizza in any patter you would like. Sprinkle with the Parmesan cheese.

Place the pizza on greased cookie sheet and pop into the oven. Cook pizza for about 7 minutes or until the cheese is bubbly. Take out of the oven and let it rest for about two minutes. Cut with pizza cutter and serve! Yum-0!
